Welcome! What you say makes a lot of sense.
I have found that NoS is really sane and a good way to eat in a "normal" way, which most diet fail to do. I have had my stretches of giving up for whatever reason, and have also combined NoS with other diet tricks (with variable success) but the backbone of NoS has been mine for the past 5 years and I have found it to be really helpful and healthy.
I think it will be great to relax and let your body settle into a good, natural weight for you!

5.75 years here. Agree with all you say. Weight loss was not the incentive, though it has happened. Just want to be able to enjoy eating! It's really not enjoyable to eat all day.

You'll likely learn lots more over the next couple of years.

oolala, This book was free on Kindle for me. I read it, liked it quite a lot, and would recommend it.

I read one similar, I believe, last year. It basically said humans have thrived on a variety of combinations of food types, so there is no one best diet. I suspected as much already. I've said here many times I"m not a purist, meaning even though No S has a bias for unprocessed food, I still eat fast food, food out of cans and boxes, and other toxins! And I avoid others. And I guess I believe it's good to eat more veggies than I grew up on, though I wouldn't worry about it much if I were traveling where they were hard to get. We all have our idiosyncrasies. But I"m a No S-er. Put food on a plate and eat it!

But at your urging, I thought I'd take a look. When I tried to download the book for free, it said I had to try kindle for a limited time. I don't want to have to remember to cancel something. I have a free reader through Amazon, but it would not come up on that.Moot point right now. Too many essays to read for work.
