Jethro Kloss

I have been reading a rather "old" book entitled "Back to Eden" by Jethro Kloss.

Briefly, Kloss was a Wisconsin German who learned the healing arts (herbs, pultices, liniments) from his parents who were rural healers in Wisconsin. He developed several soy products, and was a very strict vegetarian.

Kloss' grandchild, in a forward/testimonial, gave a very instructional piece of information. Kloss was very strict about letting his family not eat seconds, or eat between meals. Apparently they had "organically made" deserts with their dinners but he and his family practiced portion control.

Not a compelling book to refer you all to, but an interesting insight to the early 20th Century.
