CHILI MAC
This is not a vegetarian chili...that's another recipe.
1/2 cup raw macaroni
1 can (15 oz) red beans, drained and rinsed
1 can (15 oz) diced tomatoes, with the juice
Cook the macaroni. Drain. Add the beans and tomatoes and 1/2 cup or so water. Season to taste. I use 1 Tbs. chili powder, 1 tsp. cumin, and a little salt. Heat and eat.
Next time I make this, I'm going to replace the water with tomato sauce.
This is not a vegetarian chili...that's another recipe.

No-S: Declared an S-day for me
Exercise: chi kung this morning. Not sure what I will do this evening, if anything.
Can "S" also stand for Surprise? I had an unexpected opportunity to have lunch with the kids today, so we went to the Chinese Buffet. I ate only one plate of food, but had chocolate pudding for dessert. Also had a mid-morning snack since lunch was going to be very late, but probably won't eat dinner tonight, so I might be okay with just having three meals after all. Strange, but fun, day.

Exercise: calisthenic qigong, plus crunches, lunges, and a few push-ups.

Lunch: Green Beans and Tomatoes over a baked potato; homemade bread with lite veg spread.
Dinner: Spaghetti with Marinara and Chickpea Balls; green beans; garlic toast
Exercise: spent the afternoon at the job application machine at Walmart; too tired when I got home to do any exercise.
Here's a couple of recipes for anyone who wants them:
Green Beans and Tomatoes
1 can diced tomatoes, with the juice
1 can green beans, drained
2 slices onion, chopped
1 tsp. chopped or minced garlic
Cook the garlic and onion in the juice from the tomatoes. Then add in the tomatoes and green beans and cook gently until hot. Top a potato or rice with this.
Chickpea Balls for Pasta
1 can chickpeas, drained, and mashed
1/4 cup whole wheat flour
1/8 tsp. black pepper
1/4 tsp. onion powder
1 stalk celery, finely chopped (I left this out)
(I added a little garlic salt into this)
2 Tbs. oil
Mix all ingredients together in a bowl. Form into balls. Fry in oil over medium heat until browned all over. Use with spaghetti and sauce.

Exercise:
Dinner: On the Fridays during Lent, our Knights of Columbus puts on a really magnificent fish fry. I ate there with my family, baked potato, salad bar, wheat bread.
Exercise: stretching, meditative, and calisthenic chi kung sets in the morning (about 45 min.). Dis-mantled bread shelves at the grocery store.
No S: (small afterwork snack, otherwise a good No-S day)

There are so many variations on the hummus theme. Here is what I made today:
Hummus Du Jour
1 can (15 oz) chickpeas, drained and rinsed
1 clove garlic (I used 1/2 tsp. minced garlic from a jar)
juice of one lemon (I used 2 and 1/2 Tbs. bottled lemon juice)
salt and pepper, to taste
olive oil, as needed to puree
Put everything in a food processor and puree.

What a wacky day. I woke up sick, thought it was the flu, but now it is morphing into a head cold. Wouldn't mind so much, but I have a job interview tomorrow and another one on Friday. Bad bad timing!

I decided to drink some hot honey and lemon for my cold -- technically sugar on a no-s day, but this is for medicine, and not sweet, so it's okay, right?

Interviews go hand in hand with stress.. I doubt this is just a coincidental cold... I have this happen when I'm really stressing...
I know what you are going through... I've been going through a similar experience for weeks now...
Take a lot of hot showers and get extra sleep!
Honey and lemon are a totally kosher choice!

Walmart offered me the job in Deli this afternoon, pending the results of the criminal background check and drug test. Do you think that string of ax murders will cause problems? The idea of me doing drugs is pretty funny; I don't even do caffeine.
I am feeling better today, except for the cough and resulting raw throat. The pharmacist at Walgreens was really helpful. She found a bottle of guaifenesin tablets with no alcohol, food color, or aspartame, so I can get some relief without triggering a migraine.
Tomorrow is my interview at the supermarket. That's the job I really want, so I am hoping it will go okay.

Good News Department: The supermarket offered me the job I wanted immediately.
Then I went to the clinic attached to the hospital to get looked at by a doctor. No pneumonia, thank goodness.
I'm tired and sick, so I'm going to go lay down for a while. See everyone tomorrow.

Up early as usual, and coughing like crazy. But it's a good cough today, so that's a relief. Fever broke sometime during the wee hours of the morning, throat has stopped hurting, and body doesn't ache. Stomach is better today, too, and I'm starved from not having eaten anything yesterday. I'm glad it's an S-Day...look out!
Does heavy constant coughing count for crunches?
I think I'm really going to like my new grocery. It's a SuperValue store, which is the nation's second largest chain, behind Kroger. Even though I will only be there until August, it will open new doors when we get to D.C. Plus it's bright and warm and clean and filled with friendly people. Orientation is next week sometime for the new hires, so I have a few more days to work through this disease.
I'm not sure what to do about this weekend's activities. Tomorrow is my husband's birthday, so we are getting together with the kids today and going for lunch at Olive Garden. Then tomorrow, husband, daughter, and I have tickets for the opera (Don Giovanni). I really don't want to stay home and miss the fun. What to do, what to do? Only the Shadow knows...have a good couple of S-Days everyone, see you later!

Happy S-Day!
I saw a semi-interesting book at Barnes and Noble this evening. It was titled "The Weekend Off Diet." You can imagine, that grabbed my attention! Basically it was no-s in concept (diet on weekdays, relax on weekends), but it was lots of glossy pages with stunning photos and meal plans, required foods, substitute foods, statistics, etc. etc., everything you'd expect in a "fat" diet book.
I think I much prefer our little 14-word version...much less complicated!

Basically it was no-s in concept (diet on weekdays, relax on weekends), but it was lots of glossy pages with stunning photos and meal plans, required foods, substitute foods, statistics, etc. etc., everything you'd expect in a "fat" diet book.
I think I much prefer our little 14-word version...much less complicated!

Just popping in to say 'hi' to everyone, as it seems I am not on the computer much recently. Heavy work schedule at the new supermarket, resulting aching feet, legs, and back, and absolutely mentally overwhelmed by the computerized register system (am I getting too old to learn this stuff???), is what's keeping me away from the board.
On the bright side...
No S, everyday... , so that's a good thing.
Exercise...not too good, but I just got a nifty new step counter to begin the walking season. As soon as my feet start speaking to me again, I'll start Urban Rangering.
Daughter just got her driver's license...
It is confirmed that the Bishop is sending my husband back to school, to Catholic Univ. in Washington DC, all expenses paid, so we will move the first of August and be there for two years. It will be hard to leave our son and daughter-in-law behind here in MN; we are a close family. Daughter will be with us for the first year, and then will return to MN to go to school. At least the kids will be all together in one town.
So while I am struggling to learn this new job, I am simultaneously preparing to move in a few months. Life is really really weird sometimes.

well, you've mastered colourful language, quotes, talking BIG and all the other stuff on this board, so you'll lick the cash register into shape fairly soon too, I'm sure of it!
I feel for you with your 'Nomadic wanderings'. I'm sure it will all settle down and once the grocery store job settles down you'll have one more positive thing to take with you to washington, as you should be able to transfer.
As for rangering, can you 'ranger on the spot' behind your till at all? If you're on your feet all day anyway then at least you'll be burning up those calories, compared to us sedentary desk-sitting beasties

Exercise:
Ate lunch with the kids at the Chinese buffet (our "default setting" restaurant when Dad isn't with us) and I told myself that I was going to get a second plate because there was just so much good food on the buffet line. But when I got to the end of my first plate, I realized I wasn't hungry anymore, so that was the end of that! No-S rules!
Exercise: nothing formal yesterday or today. But I got about 6,000 steps yesterday and predict the same for today. When the weather warms up, I will Urban Ranger a bit, and that should get it up to my daily goal of 10,000 steps a day without any problem.
I have Thursdays off, so my feet feel pretty good right now! Yesterday went well at work. I finally told my supervisor that I was having trouble learning the computer/register stuff because I am a very visual learner, not kinesthetic at all, and I really needed to write the procedures down. So he got me a pad of paper! Once written, I was fine for the rest of my shift, and am confident that tomorrow will be okay, too. I don't mind calling my supervisor for help on something that I haven't seen before, but being lost on something I have already had explained is really difficult. I love that grocery store. You should see the produce section. A veritable artist's palette! The rest of it is very well laid out and maintained, and the staff seems to really care about the customers. Can't ask for more than that, so I really want to do a good job there in the time before we move.

No S has been challenging for the past week because of my ever-changing work schedule, but it's going to work out okay. Exercise has been limited to qigong, which is energizing. I need that these days.
Weight is holding constant. Hooray!
Dinner: tried a new recipe for "Vegetarian Meatloaf" -- mostly lentils and grains. I liked it a lot, and even dh had seconds. Also had cauliflower and slices from a homemade bread loaf.

Happy S Day!
Yesterday, I signed into my register by typing in my password...the whole system crashed and the computer had to be re-booted. What a way to start a shift. But the rest of the evening went okay.
No-S is fitting into my strange dinner un-schedule. Weight is holding steady.
Exercise is mostly chi kung, crunches, and dumbbells. As long as I'm not re-gaining weight, that's okay for now.
I haven't had time to post any new recipes lately, but here's one for whoever it was that told me how much he/she liked hummus:
TWICE-BAKED STUFFED POTATOES WITH HUMMUS (Vegan)
4 (about 8 oz each) baking potatoes, washed and scrubbed
3/4 cup prepared hummus
1 Tablespoon chopped chives (optional)
salt and pepper, to taste
paprika, to taste
Preheat oven to 450 F. (230 C). Prick the potatoes with a fork and bake for 1 hour, or until tender. Reduce the heat to 375 F (190 C) and let the potatoes cool at room temperature about 15 minutes before handling.
In a small bowl, combine the hummus, chives, salt, and pepepr. Set aside.
When the potatoes are cool enough to handle, cut in half lengthwise and scoop out th potato, leaving a shell about 1/4 inch thick. Add the warm scooped-out potato to the hummus mixture and mash well to thoroughly blend. Stuff the mixture back into the potato halves and smooth the surface with the tines of a fork. Sprinkle lightly with the paprika.
Put the stuffed potatoes on an ungreased baking sheet and bake until heated through, about 15 minutes.

A very blessed and holy Easter to all.
We decided to celebrate Spring in our Easter dinner. Here's the menu, which has something for everyone in our family, both veggies and omnis:
Pork chops
Mashed potatoes
Dinner rolls
Steamed fresh Asparagus
Baby corns
Cheese platter, with samples of cheeses that we don't normally buy
Fresh Fruit platter: mangos, papayas, kiwis, strawberries
Today is a hugely busy day at the Church (which is following a busy day at the grocery store yesterday and then coming home to the Easter Vigil last night). We have about 1500 eggs (including my husband's famous Easter Yams, which merit a special prize to anyone who finds them) to put out in the field this morning, then Easter Mass, then the egg hunt, then a bunch of baptisms. My goal in preparing dinner was to minimize the amount of cooking I have to do today.
Then I'm going to put my feet up and the heck with exercising today!
Update: nearly 13,000 steps from Urban Rangering...so much for not exercising!

I haven't posted for a while but, with the exception of last Thursday, everything is fine in the No-S department. I blew it on Thursday, mostly from stress. Otherwise, though, I'm behaving myself daily and also exercising regularly: 10,000 steps on my days off from work, and qigong on work days.

Yesterday was a failure as far as no-s goes, although the exercise was pretty good (8000 steps and I never left the house once!).
Today was okay for no-s, although it was a work day, so the meals were erratic and rushed. Exercise was calisthenic qigong followed by aerobics.
Backtracking...on Tuesday, I had 11,000 steps and on Wednesday, it hit 14,000.
Tomorrow we celebrate our daughter's official graduation from high school with a dinner at Red Lobster with family and two of her best friends.

Jan, what kind of step counter do you use? i am thinking of getting one, but wasn't sure if it mattered what kind...are the cheap ones the same as the more spendy ones? would rather go cheap...

My husband and I have been using our counters nearly daily for several years and are very pleased with them. No frills, just counts steps. We aim for 10,000 steps each day.
The nice thing about it is that everything counts, not just the planned walks we take. So we get "credit" for all the moving around that we do, but it also keeps us honest.
Don't waste your money on the cheapies from Walmart or Target. They aren't accurate. Sportsline is not a good brand, from our experiences with them. My current counter is a Digi-Walker SW 200, and my husband is using an Accusplit Eagle. As I say, we are very satisfied with these brands. Prices vary, but $20 to $25 is probably in the ballpark.

Lunch: leftover green chile stew and some green grapes
Mid-afternoon snack: can of Dr. Pepper; a Heath candy bar; 2 more buttered tortillas
Dinner: meatloaf; french bread; roasted potatoes; green peas
Movin'
30 minutes aerobics, crunches, and upper body weights. Urban Rangering, 1.5 miles.
I think that Saturday doesn't need to be an S-day for me this week!

I'm glad I'm not the only one who had an S failure yesterday. I had, basically 2 dinners last night. Sushi with the kids after school (thinking that I'd just have that) But, no....when husband came home about 4 hours later, I celebrated by making him some food and having some of that too!!!!
That business of eating after school is an old pattern for me. A big oops. I haven't figured out why it happened. Still thinking... D.

We've been on vacation at Lake Superior all week and had lots of fun. Now I am back, sunburned and a few pounds heavier, so back to the routine!
Breakfast: one egg, two pieces of toast with jam, one glass apple juice
Lunch: banana dog (bun spread with peanut butter, plop in a banana, top with a little applesauce --> complete meal!)
Dinner: on the road, taking kids from the church to a Twins/Orioles game: Boca Burger on a bun; grapes; raw carrots
Exercise: brisk Urban Rangering, 11,000 steps so far, and probably about 13,000 by the time I get home and collapse into bed.

Sunday was a tearful day. In the morning, we had our going-away party at the Church where we live and work, and then, in the afternoon, went to the final performance of our daughter's theatre troupe. Her best friends were there with us. It was sad to say goodbye to these kids who we have watched grow up over the past few years. So I spent most of yesterday crying, and I don't think I am done just yet.
