I found this article about fats in the diet last week.
The mention of inflammation interested me. More and more I think that the overly processed, manufactured foods (as well as other things in our environment) cause inflammation which causes a host of other problems. I mentioned it here last year. While I think that our habits are certainly a big part of overweight, I think that, especially in terms of health, the inflammatory process might be more important than fats or carbs.
One of the things I've noticed in reading about the various traditional diets is that when the overly processed, industrialized, chemically enhanced, fake foods become more available, the level of health begins to decline. Unfortunately for the people in many other countries, it's happening to them more quickly than it happened to us.
