You can eyeball it or 'virtual plate' as it were. If you had a large plateful of food and then a yoghurt and fruit afterwards - that might be too much. If you could fit them all onto one plate if you wanted to, you're alright.

There's no need to record what you eat if it's not something you find helpful - maybe try using the habitcal. You just record green, red and S days and it's a great visual check of how you are doing habitwise without the faff :)

A french fancy is a small square piece of cake, with a splodge of fondant on the top and then covered in thin icing. Very very sweet! Too sweet actually, I think my tolerance for sugar is diminishing!

Sometimes if I have a graze-urge I get a glass of skimmed milk, or sugar-free squash, or even just water and sip at it - mostly it works to curb the snacking urge.
