I've been pales/low carb (with no effect because I find it extremely difficult to live with!) and am looking for more breakfast options.

Ummm, cuppa old-fashioned oatmeal, handful of dried fruit, half a handful of nuts, pour water over it and let it get a little chewy...
Dried fruit I like in it: apricots, raisins, cherries, blueberries (total fave, but expensive), apples, cranberries....
Favorite nuts: walnuts or pecans
Now when I have the time, what I REALLY like is steel cut oats.

Late to the party, but here are my two favorites:
1. Cook 1/2 cup old fashioned oats with a chopped apple, a handful of raisins and some cinnamon mixed in. Top with a dollop of Greek yogurt and a few walnuts. Sprinkle on a little more cinnamon.
2. Cook 1/2 cup of old fashioned oats with a couple tablespoons of pumpkin puree, a handful of raisins or chopped dates and some pumpkin pie spice mixed in. Top with a dollop of Greek yogurt and a few chopped pecans.

Other Oatmeal ideas:
I'll give add-ins scaled to one serving--easy to scale up to fit your needs...
1. PB&Banana: Stir-in 1T PB and half-mashed banana. Drop of vanilla extract and dusting of cinnamon optional.
2. Banana-Walnut: Stir in half-mashed banana, 1 tsp. maple syrup. Top with 1 T toasted Walnuts.
3. Morning Glory: Add before cooking: shredded carrot, shredded apple, shredded zucchini, spoon or two of shredded coconut and chopped pineapple. Cinnamon optional.
4. Cranberry Orange: Sub half the water with OJ, add a little orange zest, cook with some dried cranberries. Top with nuts. Mmmm.
Lastly, I often like to make "Baked Oatmeal"--you can find recipes on the internet, but the basic gist is to combine ingredients as if you were making oatmeal, add an egg to the water/milk/liquid, mix well, put in greased pan, and bake. Leftovers reheat really well.
Note: I found that I can toast "nuts to go" by using my microwave: spread a few spoonfuls on microwave-safe plate. Nuke in 30 sec. increments (1-3x, depends on amount. Will smell toasty but be soft. Let cool a few minutes to crisp up. I love being able to get just the amount I need when I want it....
