oatmeal recipes

I know I saw a few here earlier....but does anyone have any good oatmeal recipies?
I like the taste, but not the consistency of the oatmeal in my mouth.

My doctor recommended the following recipe to me and I love it!
lightly beat 2 egg whites with a tablespoon or 2 of unsweetened applesauce in a small bowl. Add 1 packet of oatmeal (I use the Quaker Weight Smart oatmeal - any flavor) and a dash or so of cinnamon. Mix all the ingredients together and pop in the microwave for 2 minutes. It comes out looking like a wide muffin. Let it cool a bit before taking it out of the bowl. Perfect for an "on the go" breakfast.

This morning I made your recipe with the following variations:
2 raw egg whites, 2 tbps unsweetened applesauce, 1/4 cup dry oatmeal; 1/8 tsp cinnamon; 2 pkg splenda.
Mixed together, microwaved for 2 minutes.
It was absolutely delicious and very filling.

Mel! You seem to be turning into a double of my little dog... Polyjuice potion, maybe??
I tried your recipe with regular oatmeal this morning, 1/4 cup as Bright Angel recommended. It came out a little weird, but tasted fine and did hold me for a long time.
I used 1/4 c oatmeal
2 Tbs. Healthy Harvest Country Berry applesauce (unsweetened, but blue from the berries, so the finished product looked -- odd.)
2 egg whites
2 tsp granulated brown sugar
also mixed in a tablespoon or so of dollar store "tropical trail mix," mostly dried fruits with some coconut added. I despise fresh papaya, but the dried was fine in the recipe.
It came out a little wet to consider a grab n go breakfast, so I ate it with a fork. It was kind of like oatmeal studying to become a pancake. I ate it with the rest of the applesauce (a lunch box serving) and an apple, a bit disappointed because I was out of veggie sausages.

Hi eljay, sorry to hear it didn't turn out as well, perhaps you could add a bit more oats - might help the consistency. Also, I let mine sit in the bowl for a bit so it is not too hot to hold in my hand to eat. Perhaps it gets more stiff as it cools off? I haven't ever had it come out too wet.

My version of the recipe also came out perfectly.
After it cooled, I could hold it my hand
and eat it just like a fresh moist mufin.
Regarding the basic recipe (without the added fruit & nuts)
I used real egg whites from whole eggs,
not one of those mixtures in a carton.
I've found this can make a difference in moisture within recipes.
I'm also thinking that perhaps the change of adding brown sugar (I used Splenda)
might add moisture, and, if so, it might need to be microwaved an additional 15 seconds or so.
Also, adding fruits might change the texture,
because even though dried fruits are dried,
I believe they add moisture.
