I guess that depends on what else is in it. I wouldn't count a plain coffee or expresso, but start adding sugar and milk, and I probably would, especially if it went over 50 calories for a cup. Luckily for me, I've never been a big coffee drinker and only occasionally, as a treat, have a mocha (maybe 3 times a year, if that). I don't see any problems with having a cappuccino with a meal, especially if light on the sugar. The big goal is to develop the habit of set meals (usually 3) per normal day, with no in between snacking and consumption of sweets. The rest seems to fall into place after that.

I'd call it "gray." And really, "light gray." Depends on how much stuff you put in and how many you have.
I have two cafe au laits each morning. They're basically milk and coffee, with 1 tsp of sugar each. I allow another "if I need/want it" during the day, but it's rare that I have it. (They cost once I leave my house, and I'm cheap.) To me, the equivalent of a glass of milk and 2-3 tsp of sugar is just not a big deal.
But if I had 6 a day and added all the sweeteners and toppings available at the coffee shop... well, I'd think twice.

I don't count lattes (I almost always have one mid morning) as snacks, but I do count alcoholic drinks as S's. I think you just need to figure out for yourself, and then stick to it, what you're willing to count as snacks or not.
