Salad dressing, my recipe

Alright, someone was asking me off list about my salad dressing recipe ... I only made it once so far so there's tweaking coming up of course, here's the one I used, I found it on a website. (I forget which one !)

I prefer vinaigrettes personally, the more liquid ones, compared to the thicker mayo typed dressings on the side, I prefer it all mixed in instead of on the side.

...

1 tbsp, minced garlic
1/2 tbsp, white vinegar

1/2 tbsp. dijon mustard or yellow mustard
(I used dijon)

1 tbsp honey or maple syrup
(I used honey)

1/2 cup of canola oil

2 tbsp chopped unsalted almonds
salt, pepper (easy on the salt, just a pinch !)

...

Mix all this in a small container.

...

Mix again just before you are about to use it.

I should make some more within a couple of days since I am almost out, I use 2-3 tbsp on my salads.
Pretty good. I might tweak a thing or two. Since I make
small containers it's easy to tweak this and that until I get the one version I prefer.

You can change this or that in the recipe, it's not written in stone, you find the variation you like and you use it ... ingredient, quantities, add-ons, etc.

That sounds a little oily for my tastes -- I prefer vinaigrettes to be more acidic.

I've been using this formula:

3 parts oil
2 parts vinegar (Or lemon juice. Sometimes I use 1 part red wine vinegar and 1 part lemon juice)
1 part honey
Salt and pepper to taste.

Sometimes I use a dab of dijon mustard, or add a little garlic or ginger or both. I actually have a few variations -- depends on what I want!

I'll tweak my recipe a lil' bit in that direction.

I was following the recipe I found but there are multiple variations ... ingredients, quantities, etc.

I will apply changes next time, until I come up with the version I like the most.

I love the vinaigrette dressings as well so I usually just thin any fatfree or lo-cal dressing I buy with half vinegar. Usually apple cider but regular white vinegar is fine as well as some of the "fancier" wine vinegars. My favorite blend is the Catalina/vinegar mix but it works with ranch, french, and of course Italian. Also did it with dried red tomato, yummy.

I literally cannot eat the thick dressings now.

Ok, I was a mad scientist in the kitchen tonight and I made a lil' container of salad dressing.

Tweaked my recipe a bit so that the taste would be less oily and more 'intense' ... I'll try to eat some tomorrow on a salad because you can't really judge the final product just by doing the finger licking test, you have to use it for real on a salad to be able to tell if you hit a home run. I put 2-3 tbsp on my salad and mix it all up in there.

Recipe I used this time :

2 tbsp. minced garlic
2 tbsp. white vinegar
1 tbsp. white wine vinegar
2 tbsp. dijon mustard
2 tbsp. honey
1 tbsp. ground black pepper
1/2 tbsp salt
1 tbsp sesame seeds
1 tbsp crushed walnuts
5/8 cup canola oil

Mix, mix, mix. shake, shake, shake ... refrigerate. ;-)

Hehe ! Well, I'll experiment first to see if my current recipe couldn't be improved. I haven't tasted it yet on a salad. I should do that in about 20 minutes. ;-)
