So I have always exercised, but during stress I do eat more. What the hey? I should be exercising more.

Dovetails with what I've been reading about how the brain organizes groups of neurons into modules that drive behavior. A module that has been successful in the past is more likely to take the forefront in similar situations. If we take a new strategy consistently, a new module will form to drive that behavior.

I think it still takes willpower to get a track record on the new habit, though. But knowing the payoff can sure help with motivation to stick to it.
