One egg and some spinach to go with it!

So I decided I was in desperate need of help and I hired myself an online personal trainer for a month. She sent me the meal plan for the week. For breakfast I would be eating 1 cup of spinach and 1 egg. Sounds Yummy? I don't think so.
It made me think of the NO S Diet and how you can eat anything that is not full of sugar. ANYTHING. There is freedom. All I need to do is have moderation. I can do that.
I think I finally have gotten past my fear of the NO S Diet and I can really get started and stick with it for the rest of my life.

Good for you, April.
I could see an egg with spinach being a not half bad breakfast, as long as you could wilt the spinach in olive oil first and then beat in the egg and give it a wee sprinkle of salt and pepper. A piece of toast, perhaps a piece of sourdough, with a smear of butter would finish it nicely if I were hungry.
But somehow, I don't think that's what your trainer had in mind.

Mmmmmm....I think I would cook that spinach in butter and then crumble a hard-boiled egg over the top. And that buttered sourdough toast would be perfect, Blithe Morning.

I love everyone's ideas to make that 1 egg and spinach a real breakfast. Hmmm, I'd fry the egg in a smidge of butter, wilt the spinach, and put both on a piece of toast thinly spread with pesto. Sprinkle a little salt, pepper, and freshly-grated Parmagiano-Reggiano cheese on top.

I think your trainer was trying to get you to leave out the toast or bread.
I wonder if French athletes skip bread?

Ugh. Meals without starch and fat are gross, which is why no one can stick to a low-carb or low-fat diet. I agree with everyone that toast and butter are the way to fix this crappy breakfast.

How about 2 eggs cooked in the butter/oil of your choice, with spinach, tomatoes, mushrooms, no salt seasoning, and topped with some melted cheese? Add some fruit and/or toast on the side.

That sounds good, but I'd definitely add some salt!

Egg and spinach huh....
I think eggs Florentine sounds more appetizing. Would your trainer allow for a mod?

Just want to say that in year three I've had a few breakfasts of similar small size as one egg and spinach be enough. But I wouldn't have forced that on myself in the beginning.
