Hey welcome to the daily boards!
A moderate low-carb (rather than anything extreme) works really well for me; perhaps at some point you'll find a nice "settle" point for carb intake that works for you.

I really hope you are able to gradually relax during this Christmas break. I know how hard it can be to settle down after we've been wound up for so long. You know, I hardly ever even register people's food on this forum, but your food always looks good to me. :-) I love me a good egg salad sandwich...

The combination of the intensity of the new job, COVID stresses, and the still-processing-grief from losing your dad sounds like a mighty mix for anxiety, Soprano. And you lost your collie, too! Glad you are recovering! And I would hope that you have at least some level of immunity for more than 90 days! I mean, if someone that actually GETS the disease and recovers is only immune for 90 days, what hope do we have of any sort of reasonable protection with the vaccine?

Generally, it's suggested that you test at the time you start a meal, and then 2 hours after the meal. Ideally you will have returned to your baseline within 2 hours. You probably eat many similar meals throughout the week, so once you have a good idea of how you respond to a particular meal, you pr...

Thanks Soprano. :-) Yesterday afternoon and evening I sort of fell apart lockdown-wise. Soprano - I remember how frustrating middle schoolers can be when they got goofy or challenged me.
