Our Trader Joe's has artichokes for 69 cents each now. I like artichokes, and they are healthy:

The only problem is, whole steamed artichokes are best if you have something to dip the leaves in, and the traditional dips (melted butter-based dips and mayonnaise-based dips) leave something to be desired from a health standpoint.
A couple of days ago, the idea of using hummus as a dip for artichokes came to me. Hummus is healthier than most of the things people dip artichoke leaves in, from what I've heard. I got to try it tonight, and it was good. It's super easy to make, since you can use pre-made hummus. Of course, you could also make your own hummus, if you wanted. Steaming artichokes is not difficult. I used Sabra brand chipotle hummus and roasted garlic hummus, but I'm sure that any kind you like would work.

Butter isn't my thing, though. My parents used to store their butter in an non-airtight butter dish in the fridge, and it picked up off flavors. Improperly stored butter is bad.
